At Café Gratitude, most of our dessert recipes use coconut oil. Coconut oil and cacao butter are used in raw desserts to create a firm, creamy, sliceable consistency. Without these, everything would have to be served in a bowl! In the café, we mainly use unscented coconut oil as it does not add coconut flavor to the recipes (except where we want it!). Our unscented coconut oil is the result of first filtering virgin coconut oil through diatomaceous earth, which removes impurities as well as some free fatty acid. A dry steam and vacuum process then reduces the characteristic strong coconut smell and flavor. The oil is not hydrogenated and no chemical solvents are used in this process.
Coconut oil is highly prized for its many medicinal properties, most of which come from lauric acid. Lauric acid is a medium chain fatty acid that is converted in our bodies to monolaurin, an antiviral, antibacterial, and antiprotozoal monoglyceride used extensively by our immune systems. In addition, coconut oil is an antioxidant, and is regarded as useful in blood sugar stabilization, lowering cholesterol, and in keeping the heart, liver, kidneys, and skin in good health.
