Agave (Agave tequilana weber azul) is a sweetener made from the sap of the hearts of the agave or maguey plant, a succulent. Its recorded use dates back hundreds of years to Aztec Mexico, where it was used for food and later to make an alcoholic drink called pulque. Mayahuel, the goddess of the maguey plant and of fertility, is also known as the protector of mature wombs that turn into life. In Aztec mythology, Mayahuel was a human girl whom Ehecatl, the wind god, fell in love with. He gave humanity the gift of love so that she could return his favor.
Our agave is 100% blue agave and is never heated above 115 degrees. It is certified organic and is traded according to the highest fair trade standards. Agave has almost twice the sweetness of table sugar, thus less of it is needed. The main carbohydrate is a complex form of fructose called inulin or fructosan. Agave has a low glycemic index and is considered to be a better choice for diabetics than traditional sugars.
Suggested use: agave nectar is about twice as sweet as regular sugar, so you only need half as much. Mediate other liquids in your recipes if using as a substitute in baking.
